Southwest Egg Frittata
I tried this recipe on Sunday- minus the sour cream- and it was delicious. I previously had an egg frittata straight and it was okay but nothing special. Now I am ordering extra egg frittatas in my new order so I can make more of this southwest recipe. I highly recommend trying it!

This is the recipe I used. It is from the Nutrisystem Recipes that are on the website. I wish I could take credit for creating it but I didn't. I took out the green onions and sour cream and increased the sals to 2 tbsp. when I made it.

1 Nutrisystem® Egg Frittata
1 large egg
1/4 cup chopped green peppers
1/4 cup chopped green onions (set some aside to use for topping)
1 tbsp. salsa
1 tbsp. fat-free sour cream

1. Mix Frittata as directed on package; set aside.
2. Mix 1 tsp. water with egg, set aside.
3. Add the peppers and onions to the beaten egg.
4. In a small, microwave-safe dish or bowl, blend egg and vegetables with the Frittata.
5. Cover with a paper towel and cook in microwave on 50% for 90 seconds.
6. Cook at 100% power for another 90 seconds, until egg is cooked through.*
7. Top with sour cream, salsa and a little chopped onion.
