I really enjoy making home-made soup for my family.
In a previous blog post I shared my Home-made Veggie Broth recipe and this week and I've come up with a yummy soup to go with it that includes only the "Unlimited" veggies allowed on our NutriSystem diet plans.
When making a salad (or in this case, a soup) you can combine as many "Unlimited" items as you want and it still counts as only one vegetable serving. In addition, NS allows 16 ounces (2 cups) of
salt-free broth each day under the Beverage guidelines.
With that in mind, I've come up with a soup recipe I've named
Unlimited Soup:
Serving size: 1 cup
2 cups
Kiki's Sodium-free Home-made Veggie Broth (optional)
6 Green Onions, sliced
1 bunch Celery, chopped
1 Green Bell Pepper, seeded and chopped into bite size pieces
10 oz Mushrooms, thick sliced
1 Zucchini, diced
1/2 head Cabbage, chopped into bite size pieces
1 cup Broccoli, chopped
1 cup Cauliflower, chopped
2 cans No Salt Added Tomatoes
10 cups Water
On medium high heat, saute sliced green onions, chopped celery, and green pepper in a large soup pot with 1/4 C of broth or water until tender. Add remaining vegetables and cook for 2 minutes on medium heat. Add canned tomatoes, remaining broth and water. Cover and simmer 45 minutes to an hour. Remove 2 cups of soup and process in food processor or blender until smooth. Stir the mixture back into the soup. Serve in 1 cup portions when hunger strikes or as a vegetable option with your lunch and dinner.
Note: Add fresh herbs, pepper sauce, black pepper and garlic powder to season. Or season any way you like - just don't add salt!
I'm "guess-timating" the calories in a one cup serving of this soup is probably about 67-70 calories.
