I went to Zumba last night. I haven't been for about a month or more. I could FEEL the difference of not having to move and groove the additional 50 lbs around. That was exciting. I still have the aches and pains today I would normally have after Zumba. Our instructor challenged us all to 100 sit ups twice a day! I am thinking maybe I will start with 50, twice a day....and see how that goes for a week. Does anyone have any breakfast ideas? I need to mix it up and feel SATISFIED. Everyday I have my NS meal, eggwhites with zuchini or broccoli in it...and either some berries or a 1/2 c. of OJ. I LOVE breakfast. Its my favorite NS meal.

After eating poorly last weekend, I stuck to the plan all week and lost about 5 lbs. Today marks a day where I have been the lowest I have been in over 10 years...maybe even 15 years. I am only 1 1/2 lbs away from another small goal. Since I am almost out of NS food for this month...and I have a work lunch to attend...I am going to eat off plan, but reasonably today.

I just spent about an hour and half online AND on the phone with 5 different " NS consultants". I am not HAGGLING FOR A CAR...I just wanted my food! Ugh! We got it worked out in the end - but JEEZ!

It seems that I can go for about 3 days on the plan.....perfectly.....then life/events get in the way. I am struggling. I finally crossed the threshold of a new number....then I gained a bit and fell back into those same 10 lbs. Now I am working to get 3 lbs off to break through the threshhold again. I feel like I have been in the same gain/loss 10 lb hell for WAY TOO LONG. I know the holidays came and went...and I have been sick for weeks......I can't wait to just head in the right direction.

Well Gee-Whiz! You are welcome fans....thanks for the accolades....here are my other recipes.
Here is my other roasted fave:
1 container of brussell sprouts - quartered
1 SMALL sweet potato (forbidden NS food...so just buy a very small one)
1 box of sliced mushrooms
Make sure sweet potato is cut up into chunks that are similarly sized as the brussell sprout quarters....light salt, pepper, EVOO......450 degrees for 30 minutes...stir...another 30 minutes...

Breakfast is my FAVORITE. For a breakfast that is VERY FILLING and only = 1 protein and 1 veggie....I prepare zuchini and summer squash in ZIPLOCK STEAM BAGS (THEY ARE AWESOME!). I put it in a container in the fridge for the week. In the morning, I take 1 ziplock twist top small container and hit it with some PAM. I throw in 1/2 cup or more of the zuchini/squash mixture and add pourable egg whites (3/4 cup= 3 egg whites = 1 protein) which are sold next to the Egg Beaters. Throw it in the microwave for 2 minutes. It comes out fluffy and huge. I pop it on to a small plate and throw ketchup on it and eat it next to my regular NS breakfast meal. I eat this veggie and egg white dish just about every day.

First of all, I went to a party last night and everyone remarked at how good I looked. Hooray! 50 lbs lost in 1 yr!
I took the day off of NS yesterday and ate like "real person". At the start of this journey, I was VERY STRICT with myself. I lost weight, but when I started to eat "real human food" - I would get incredibly ill. I even ruined my 10 yr anniversary by simply trying to eat a REAL MEAL. I feel like integrating normal foods is the way to 1) NOT MAKE ME MENTAL and 2) Keep me on the plan. I always pop right back on the plan for the next meal. Might not work for everyone, but works for me.
Anyway - when the weekends roll around, I always prep my produce for the upcoming week. Today, I roasted 2 - 2 lb bags of baby carrots. 450 degrees, EVOO, salt (light) and pepper) in an roasting pan....45 minutes STIR and another 45 minutes. Makes four 1 cup servings. I also prepped my eggplant. I cut the eggplant up thin, PAM a cookie pan , use a pastry brush to put a LIGHT coating of EVOO, light salt and pepper....and bake for 8-10 minutes.
So for lunch today, I took my NS grilled chicken and cut it up...added 1 cup of my roasted eggplant...threw it in a LIGHT tortilla wrap and added 1 piece of low fat cheese and zapped it all in the microwave. YUM YUM YUM! I chased it with a NS Mint Chocolate Bar.
I am not feeling so hot today. Terrible cold. I want to exercise....and I dont. Meh.

Now that the winter has hit Boston hard and walking the dog could be down right deadly, given we dont have sidewalks...looks like a return to the Wii Fit...and maybe, on occassion to my Zumba class. I start Wii Fitting last year to start the weight loss journey. I like looking at the starting weight and seeing the graph go -down down down -. Ate my Mint Chocolate bar already today. I like to freeze mine. When I look at me sometimes, I dont see a difference...but I saw a picture of me from the side at a party this week...and saw a much cuter butt. HAHAHA :)

I totally junked it up yesterday. Didn't even try. PMS. Chocolate. Chips. B-A-D.
Today, perfection.
Made a great salad with dinner. Lettuce, chopped honey crisp apple and 1 lowfat pepper jack cheese stick, chopped...FF vidalia onion dressing. I would have added a few chopped nuts, but I already ate my "Fat" for today.
Speaking of FAT....anyone see Kirsty Alley's Fat Actress show on Showtime? I TOTALLY relate!

Whip it up in a bowl. Add 1 1/4 cup of strawberries (1 fruit) and cool whip (freebie). Yum yum yum!
Today is the last day of the year. 46 lbs lost this year.
I give myself a HOORAY!
I really made it my year. New dog, went back to school, lost weight, got to send my kid to my idea of a "dream school" for his education, traveled (because I am more comfortable with myself), did new things, saw new places, found old friends, made new friends...watched "the stories of my life" unfold.
